I came across this recipe a long time ago. Not sure where it came from, but it sure makes delicious meatballs. I’ve made a few tweaks here and there and here’s the final product!
Ingredients:
(Yield 12 meatballs)
1 lb. of ground turkey
2 egg whites
1 tablespoon of olive oil
1/2 cup of low-fat cottage cheese
1 tablespoon parsley
1 tablespoon basil
pinch of sea salt
1/2 cup bread crumbs
Directions:
Preheat oven to 350 degrees.
Mix all ingredients together and form into 1 1/2 inch diameter meatballs.
Place on cookie sheet.
Bake meatballs for 20 minutes, or until browned and cooked through.
Can be served by themselves or served with marinara sauce for pasta or meatball subs.
